Marmalade

FRobertson’s ‘Ma Made’ Thin Cut Seville Oranges.

 

My need for that continuous breakfast fix of marmalade led me to this cheat. As most of the work had been done over in sunny Spain all I had to do was use two tins of Ma Made, doubling up on the simple recipe printed on the tin. As per usual I had to deviate, though my only addition was 100ml of Jack Daniel’s Whiskey - the proof is in the taste. As for the jars, I chose a selection of thoroughly clean ones which I placed into a preheated oven, 170C for 10mins; the lids of which sat sterilising in boiling water.

 

  1. Empty contents into a large 8pt (4.5ltrs) saucepan. Add ¾ pint (425ml) of water using the measure mark on the side of can.
  2. Stir in 4lbs of sugar (1.8kg). Bring to the boil stirring continuously with a wooden spoon.
  3. Reduce heat, maintain boil tor further 15 mins, stir occasionally. Add a knob of butter during boiling to disperse foam.
  4. Test for setting - remove from heat, put 1/2 teaspoon of marmalade onto cold saucer and put in a cool place. Test after 2 minutes by drawing a finger over the surface. If it wrinkles, setting point has been reached. If not, reboil for a few minutes. Test again.
  5. Stand for further 2-3 minutes before pouring into wait jars. If peel floats, stir contents of each jar.
  6. Cover each jar with screw cap, parchment or film.

 

If you do find yourself tempted into making this it should not disappoint, it really is a true culinary delight! If I do say so🧑‍🍳

This time 3kg of white sugar and 0.6kg of dark brown. Having tasted the goods the first time around I took on board my recommendation, to increase on Jack Daniel’s, however, I went ‘off-pisté’ as I had 100ml left so in with that to - hey ho.

Apple and Blackberry Jam, Hippie Style

Walking the pooches up to the nearest hamlet we collected not only fresh eggs but the last of the blackberries from the hedgerows. Our friends had kindly donated lots of delicious apples, so after soaking the berries overnight we followed the recipe in the link above to produce more jars of delicious homemade jam.

A classic recipe for Strawberry Jam made with supermarket marked down fruit and topped up with our organically grown strawberries. We halved the recipe using 1.15kg of strawberries and made the weight up to 1.2 kg with finely diced apple. Lots of foam was produced which we worked hard to remove, however, the set was fab and the taste divine!
